It’s basically an ordinary sandwich. Nothing special there: bread, herbs, meat, and caramelized onions. But, what kind of meat is there – it’s just the bomb. The meat cooked in this recipe is incredibly delicious tender and fragrant.


Ingredients

For the meat

Neck of pork - 1 kg 700 g.
Sweet paprika - 2 tsp.
Ground black pepper - 30 gr.
Hot paprika - ½ tsp.
Salt - 2 tsp.
Shish kebab seasoning - 25 g.
For the glaze:
Honey - 2 tsp.
Barbecue sauce - 2 tbsp.

For the caramelized onions

Onions - 4 heads.
Vegetable oil - 1 tbsp.
Butter - 10 gr.
Sugar - 4 tbsp.
Salt - ½ tsp.
White wine vinegar - 2-4 tbsp.

For the sandwich

Ciabatta - 2 pieces.
Butter - 15 gr.
Ruccola - 1 bundle

Preparing

Wash the pork under cold running water and dry it well with paper towels.
Mix spices for meat in a small salad bowl and rub them on the meat. Grate it thoroughly, not leaving a single free millimeter.
Unwind a piece of foil. There should be enough foil so it can be easily rolled up into an envelope. If the meat is too big, you have to put two layers of foil. Roll out the foil with the shiny side facing the meat.
Place meat on foil, cover with an envelope and put it in a heated to 150°C oven for 3 hours.
Prepare caramelized onions. Peel the onion, wash under cold running water and cut into half rings.
Heat a saucepan with vegetable oil and butter. Put the onions in it, cover with a lid and stew the onions on very low heat for about 20 minutes.
When the onions are soft and golden add sugar, salt and vinegar. Stir and once the vinegar has evaporated, remove the casserole from the heat.
We make the glaze. To do this, we mix honey with barbecue sauce.
After 3 hours, when the meat is ready and will literally fall apart into fibers, we take it out of the oven and glaze it. We glaze on all sides except the bottom.
We return the meat to the oven for 15 minutes, without covering the foil. Mode in the oven: convection + grill. This is needed to make a sweet crust.
Right after we put the meat in the oven for the second time, we take our ciabatta and cut it in half lengthwise. We put it on another baking tray. We grease the ciabatta with butter and put it in the oven with the meat (on another level). This is necessary so that the butter melts and the bun dries slightly.
Assemble the sandwich. On the bottom slice of ciabatta lay out the caramelized onions.
Place arugula on top of the onions.
Cut the meat into large chunks 1.5 to 2 cm thick and put them on top of the vegetables.
We cover meat with the second part of a bun, stick a knife into it and serve with a glass of beer.
