Cinnamon-Sugar Braid
This yeast dough is very quick and easy, no special effort is required to knead it. It is also quite easy to roll out. This amazing pastry is really wintery, because it has a mix of cinnamon and nuts, and the shape – it is so Christmasy, so festive. A worthy decoration for any holiday table.
Ingredients
For dough
Flour - 1 kg.
Yeast - 11 gr.
Milk - 400 ml.
Egg - 3 pcs.
Butter - 100 gr.
Sugar - 3 tbsp.
Salt - 0,5 tsp.
For stuffing
Butter - 100 gr.
Cinnamon - 4 tbsp.
Walnuts - 150 gr.
Brown sugar - 50 gr.
Ordinary sugar - 50 gr.
Cocoa powder - 4 tbsp.
Preparing
Warm the milk, but do not warm it. Melt the butter in a water bath. Lightly beat the eggs. Sift flour and yeast through a sieve. Add sugar, salt and warm milk and melted butter to the flour. Stir to mix. Add the eggs to the mixture and knead a soft dough, not sticky to your hands. Knead for 5-7 minutes, then cover the bowl with cling film and leave in a warm place for an hour and a half. During this time it should several times increase in size. Knead the dough with our hands and divide it into two equal parts. The first part we try to roll out as thin as possible. I was able to stretch it to about 50x60 cm. Then we move the dough to a kitchen towel (but I have not played with the second piece so much, I put it on a silicone mat and twisted it with my hands as it is, it turned out the same way as with the towel) So, we transferred the dough to the kitchen towel and distribute the filling. Melt the butter and smear the dough with it. On top, through a sieve sift sift cocoa and cinnamon, both types of sugar mixed and evenly scattered on the surface, and on top with the hands crumble walnuts. Roll up the dough into a roll. Be careful now, the roll will start to fall apart, so we have to be very patient and careful. Then we cut the roll lengthwise into two parts and braid it. Butter the round baking tin. Transfer our braid to the mold and place it along the rim, thus forming a ring. Beautifully join the ends. If you want, you can pour the filling on top of the wreath a second time. Send our wreath to the oven for 35-40 minutes at 180C. With the second piece of dough we do exactly the same. Roll it out, smear it with butter, then any favorite jam/jam, roll it up, cut it lengthwise, braid it, connect the ends, put the wreath in a baking dish greased with butter and bake.
